This vegan yakisoba uses everyday supermarket staples: budget spaghetti instead of yakisoba noodles, a simple sauce built from things you probably already have, and plant-based mince in place of meat. It’s the lunch I make on a relaxing weekend when I want something quick, filling, and a little nostalgic.
Why you’ll love this recipe
- ✔ No special Japanese ingredients — just pantry staples
- ✔ Ready in about 15 minutes
- ✔ Naturally plant-based, easy to make vegan-friendly for everyone at the table
- ✔ Uses budget spaghetti instead of pricier yakisoba noodles
- ✔ Doubles as a filling for yakisoba pan (recipe twist below)
Ingredients

Serves 2 , Ready in 15 mins
Noodles & vegetables
- 200g inexpensive spaghetti
- 70g plant-based meat (I used VEGANE CHUNKS Döner-style)
- 2 large cabbage leaves, roughly chopped
- 1/2 small carrot, thinly sliced
- 1/2 onion, sliced
- 1 mushroom
- 2 tbsp neutral oil, for frying
Sauce
- 3 tbsp Worcestershire sauce
- 1 tsp sugar
- 1 tsp toasted sesame oil
- some white pepper
To finish
- Dried parsley, for sprinkling (a gentle stand-in for aonori)
Noodle: Reach for inexpensive spaghetti. A rougher, more porous noodle holds the sauce far better — just like curly yakisoba noodles.
Sauce: Worcestershire sauce, sugar, and sesame oil recreate the sweet-savoury depth of yakisoba sauce well. Adjust the sugar to taste — some brands of Worcestershire are saltier than others.
How to Make Vegan Yakisoba
Step 1: Cook the noodles
Boil the spaghetti in well-salted water until just past al dente. Drain well and set aside.
Step 2: Mix the sauce

While cooking pasta, make the sauce. In a small bowl, stir together the Worcestershire sauce, sugar, white pepper, and sesame oil until the sugar dissolves. Set aside.
Step 3: Cut the vegetables

Roughly chop the cabbage, and thinly slice the carrot, mushroom, and onion.
Step 4: Stir-fry the vegetables

Heat oil in a frying pan and stir-fry the vegetables. Stir-fry for 2–3 minutes.
Step 5: Combine

When they start to pick up some colour, add the boiled noodles, vegan meat, and the sauce you made earlier, and mix everything together.
Once combined, turn the heat up high at the end to get that toasty, griddle-charred colour and aroma.
Step 6: Serve

Transfer to a plate, sprinkle with dried parsley. Enjoy!
Tips for the Best Vegan Yakisoba
Storage
Keeps in the fridge for up to 2 days. Reheat in a hot pan with a splash of water to loosen the noodles.
Substitutions
- No cabbage? Pak choi or other greens work.
- No plant-based meat? Sliced mushrooms or deep fried tofu (Atsuage) are a good swap.
- No Aonori? Dried parsley works here.
Variations
Yakisoba Pan
Stuff a generous spoonful of the finished noodles into a soft bread roll (a coupe roll works beautifully) for yakisoba pan — a beloved Japanese bakery snack or summer festivals. It sounds unusual if you haven’t tried it, but the combination is genuinely addictive.
A Little Background

This recipe was born at a home party with friends. I wanted my friend who loves Japan to try something that felt like a Japanese summer festival dish.
Yakisoba isn’t usually vegan, but after a few rounds of testing using vegan ingredients, even my Japanese friend said, “this is yakisoba!”
Since then, it’s become a regular on our table — the easy weekend lunch we reach for whenever we’re craving something that tastes like Japan🇯🇵♡
Frequently Asked Questions
Do I need special yakisoba noodles?
No — this recipe is built around not needing them. Inexpensive, plain spaghetti gives you a very close texture once it’s tossed in the sauce.
Do I need yakisoba sauce?
Not at all. Worcestershire sauce, sugar, and sesame oil recreate the flavour using ingredients most kitchens already have.
Is this recipe fully vegan?
Yes, as written it’s plant-based throughout — just double-check your Worcestershire sauce, as some brands contain anchovies.
